Sapakoff returned to Creighton in the fall of 2025, beginning his first season as a full-time staff member. Jeffrey works specifically with the Bluejays' baseball team and assists with the cross country as well as track and field programs.
A 2020 graduate of College of Charleston, Sapakoff earned his bachelor's of science in exercise science. His professional journey began as an intern with the Cougars' Baseball team during the 2019 and 2020 seasons. Jeffrey went on to serve as an intern at TCU during the 2020-21 season, working with both Baseball as well as Football.
Jeffrey came to Creighton to begin his graduate studies as a GA in the fall of 2021. As a Bluejay he worked with Tennis, Cross Country, Men's Golf, Rowing and assisted with Baseball.
Sapakoff moved on to South Dakota State to complete his Master's in Nutrition and Exercise Science in 2025, working with the Jackrabbit National Championship Football squad in 2023. He also worked with SDSU's Baseball and Wrestling teams, helping five Wrestling All-Americans.
His professional journey has also brought Sapakoff his USA Weightlifting Level 1 Coaching certification as well as hist CSCS though the NSCA.
